Mini or Big?

I love baking. And I love baking in Longaberger pottery. 
Today's online special is a Mini Muffin Pan. Currently not offered in our WishList. So if you are loving bite sized things, today is your day!


Do you like your muffins regular sized or mini?

I'm thinking a cornbread w/cut up hot dog. 
Very strange for me.
But a nice blueberry muffin would be heavenly too.

October. Already?

Where did September go? 
I feel as if I've lost an entire month.

We are in a new home. Boxes almost put away. 
All my Longaberger pottery has been shelved w/out any breakage. 
Baskets? Not quite yet. 
Some are already in use but most are waiting for their new place and purpose.

I have a recipe to share. I hardly use my crockpot. 
I do not like using cans of soup as a base for cooking with a crockpot. 
So I am rather picky about those recipes. 
I know crockpot cooking has a big appeal with families. 
And I get that. Even though it is just 2 of us, and I love to cook, some days 
I do not want to be in the kitchen. I'd rather be gardening or quilting.

I find most of my recipes on pinterest lately. This recipe is a keeper. For sure. 
Who doesn't love Broccoli Beef? Mmmm takeout food. 
Shoot, you can even find it at Safeway in the deli. 
But if you have to feed a family, or want to have leftovers for lunches, 
you'll need to make it at home. 
This is an easy peasy recipe from the Table for Two blog

Broccoli Beef

Ingredients
1 lb beef roast, slice into thin strips
1 C beef broth
1/2 C soy sauce
1/3 C brown sugar
1 TBSP sesame oil
3 garlic cloves, minced
1 onion, sliced - my addition
2 TBSP cornstarch
4 TBSP sauce from crockpot after dish is cooked
Frozen broccoli florets
Cooked rice

Directions
Combine the beef broth, soy sauce, brown sugar, sesame oil,
garlic, and onion.
Add the beef slices to this mixture.
Place in the crockpot.
Cook on low 6 hrs.

When done, whisk together cornstarch and cooking liquid/sauce
from crockpot to form a slurry.
Pour back into crockpot, stir well. Cook an additional 30 min.
15 min into the last 30 min, add the frozen broccoli to the crockpot.
Serve over rice.

I doubled the recipe so we could have lunch leftovers. It was very good. 
I think Eric will make this when he is hunting. 
Easy to prep the night before. Stuff everything in a zippy bag in the frig. 
Then in the morning, dump it all in the crockpot. 
How nice it will be for him to walk into the cabin after hunting all day 
and have dinner practically finished. 
So guys, you can do this too. 
Cuz, I know you really don't want to cook 
once you come home from work or hunting!!
